Bento Box Sushi Sandwich
Trying to come up with easy and creative lunch solutions everyday isn’t easy, even for me. Kids can be the toughest critics. Every meal needs to be the right combination of healthy, flavorful and fun. This bento box sandwich “sushi” can be made with a variety of ingredients. It’s guaranteed to minimize your stress, while keeping the kiddos satisfied.
Bento Box Sushi Sandwich
Serves 2
3 slices white or whole wheat bread, crust removed
3 tablespoons cream cheese
1/2 avocado, sliced
1/2 tomato, seeds removed and thinly sliced
1 carrot, peeled into thins strips
salt & pepper, to taste
Using a rolling pin, flatten the bread into thin, easily rolled, pieces.
Once you’ve rolled the bread, spread a tablespoon of cream cheese onto each slice. Slice the avocado and place on top. Wash the carrot and peel into thin ribbons with a vegetable peeler. Add the carrots. Remove the seeds from the tomato, leaving them will create too much moisture and turn the bread mushy. Add the tomato, salt and pepper.
Roll the bread into a tight log and then cut into pieces.
Serve with a side of fruit cut into fun shapes. You can easily purchase a set of fruit and vegetable cutters for less than $10.
