Healthy-ish Krispies Treats

I recently took Talya to a fair being held at a local preschool. Much to my delight, they had a bake sale setup. It took me back to my early school days. I still remember my first cakewalk. It was set up on the stage in the school gymnasium, where rows of cakes were displayed on pedestals. I was mesmerized. Talya is most likely too young to remember this experience when she gets older. But I’ll remember the fun we both had, watching the puppet show, and Talya tasting her first Rice Krispies treat. It also got me thinking, why not make a healthier (but equally tasty) version of this American classic?

Rather than making them out of Rice Krispies, I decided to use a blend of puffed quinoa cereal and puffed amaranth. Puffed quinoa is not only nutritious, but it puffs up beautifully, creating a similar airy/crunchy texture and nutty flavor. In fact, Talya enjoys snacking on them even when they’re, “au natural.”

 

Unless you’re shopping at a health food store, your market most likely doesn’t carry puffed quinoa or puffed amaranth cereal. But thanks to modern technology, you can easily order both online. I suggest using Quinoa Pop and Erbology Amaranth Pops but any whole grain puffed cereal will do the trick. I also replaced the butter with algae oil. Each tablespoon of algae oil contains as much omega fatty acids as an entire avocado. You most likely can find algae oil at the supermarket, but in case you can’t, you can order that online, as well.

This healthier version was a hit when I took it to Talya’s daycare. I’m certain your family will love them, too.

 

Healthy-ish Krispies Treats

Makes 12

3 cups Quinoa Pop

1/3 cup puffed amaranth

2 tablespoons algae oil or melted butter

4 cups marshmallows

In a pot, combine the oil and marshmallows. Melt the two over low heat, while stirring occasionally.

Meanwhile, line an 8″x8″ square baking pan with parchment paper. Grease the paper.

Once the marshmallows have melted, pour in the cereal and stir to combine. Grease a spatula to help prevent the mixture from sticking. Press into the prepared baking pan. If the mixture sticks too much, I suggest oiling your hands and gently pressing into the pan with your hands. If using your hands, make sure the mixture is cool enough to touch before handling. Allow them to cool. Cut into squares and serve. Leftovers can be stored at room temperature for up to a week.
